Slow Cooker Asian Pepper Steak

Well Hello Hello!
Sorry about my lack of posts these days... life has been very busy these past few weeks and I've been having trouble finding that all important "balance."
Anyway, I'm breaking the blogging fast with this delicious dish...
Slow Cooker Asian Pepper Steak  (Rachael Ray)


Don't judge a book by its cover. I know a lot of people aren't a fan of RR, but I think she's got some great recipes and I like how easy they are.  Rachael is often criticized for using pre-packaged products (stock, mixes...) and many people find her annoying.( I don't. I like her. haha.)  And yes, sometimes its nice to make things in a more authentic or from scratch, but I'd say this meal is pretty darn delicious! Not to mention its very healthy! Easy, healthy and yummy- thats my kind of recipe!
For this recipe, the only major change I made was to decrease the red and yellow peppers to two each, instead of three (slow cooker is too small.)
My sister and I have leftovers for the next two nights and we are okay with that! With all this snow and cold temperatures, it is a welcome dinner. Not to mention, I pretty much have something on my plate every night after work (part of the reason blogging has been put on the back burner!) so having dinner done already is great!

  2. This looks so good! I'm thinking I might make it for my lunches next week. I bet it'll be good in summer, too. (Oh, and I also like RR, although a few years ago I was watching her shows too much and had to stop because I found that I had started giggling the way she does. Weird!)
